Finca Zarza is located in the highlands of Bruselas, Huila, where fertile volcanic soils and diverse microclimates create ideal conditions for producing exceptional coffee. The farm is surrounded by native trees that preserve biodiversity and provide natural shade, allowing cherries to mature slowly and develop complexity.
The Zarza family has cultivated coffee for generations, guided by a philosophy that blends tradition with innovation. Their approach emphasizes precision, consistency, and a deep respect for the environment—ensuring each lot reflects both place and process.
Processing
Cherries are selectively hand-picked at peak ripeness before undergoing a 76-hour anaerobic fermentation, allowing sweetness and vibrant fruit character to fully develop. The coffee is then floated to remove defects and oxidized in baskets for 12 hours, which helps stabilize the fermentation and enhance aromatic complexity.The next stage is a 24-hour submerged fermentation using water initially heated to 60°C, a technique that refines clarity while adding depth and structure to the cup. Finally, the coffee is slowly dried under covered beds for 10–12 days, allowing flavors to stabilize and harmonize. The result is a layered, expressive coffee with remarkable sweetness, balance, and complexity.
