Dolmin is a young farmer from a long line in the tradition of coffee growers. His coffees made the top 20 in cup of Excellence in 2014 & 2015 and the quality hasn’t let up since then. He’s making improvements on water treatment, irrigation and drying techniques each season. He’s one of the few in his region to use raised African beds for drying his coffee. This method ensures an even drying process and long lasting product full of vibrancy and it’s original fruit characteristics with time.  Dolmin’s 100% Pacas lot is a fine example of the rich and syrupy side that Pacas brings to the table. On the nose we get freshly baked confections, hot fudge and a bite of stewed fruit. In the cup, the Pacas fills the palate with heavy chocolate coatings and elegant caramels much like a fine cognac. Creamy, balanced and full bodied, something for those who don’t want something to acidic.
