Notes: Gute Sodu comes to us from one of our favorite regions in Ethiopia - the Wamena hamlet in the Guji Highlands. The forests there are thick and the trees are all fairly young (up to 7 years old). The growing climate, long maturation of these cherries & ripe-only picking has been ideal for nuance, clarity and an articulate impartation. Eyasu Worasa, the washing station owner has done an excellent job keeping the sorting and processing of this community-lot up to the highest of standards. The result is a clean sort and direct representation of a small region in Ethiopia. The profile is light bodied, medium-high acid with medium-high sweetness. In the cup we found: strawberry, watermelon, baby’s breath, jasmine, bergamot, coffee cherry pulp, meyer lemon & long notes of concord grape. Brew with a high ratio and get the heavier notes on the berry scale. Brew it with a lower ratio and you discover the delicate and ethereal edge of the cup. However you brew it, do enjoy.
