For a limited time, we have acquired an exemplary Caturra from the celebrated area of Huehuetenango. El Diamante was carefully sorted and evenly dried in the highlands of Guatemala. Given the unpredictable and at times tumultuous weather this season, the Onyx team went to great lengths to ensure that the coffee was pulped and fermented immediately upon picking and protected each harvest haul from unexpected rains during processing. A consistently sweet, clean and juicy offering. From hot to cool, we found notes of brown sugar, cardamom, caramel-apple, lemon zest, nectarine and subtle florals such as chamomile and honey on the finish.
